Long looked down on, the burger has become one of Paris's most serious pleasures. The city rode the smash wave, those beef patties crushed and caramelised on the flat top, then a whole generation of counters that tend to their buns, French beef and house fries as carefully as a bistro tends its dish of the day.

Two institutions led the way: PNY, which burst onto Rue du Faubourg-Saint-Denis, and Dumbo, awarded the Fooding prize for best burger and now the smash temple of Pigalle. Around them, Spécimen in Saint-Germain, Le Ruisseau in Montmartre and Le Burger Fermier des Enfants Rouges each defend their own idea of the perfect burger, from the sharpest to the most generous.
