No more tex-mex drowned in cheddar: a new generation of addresses works fresh nixtamal-corn tortillas made to order, slow-cooked al pastor or cochinita pibil meats, tortas and mezcal. The press has followed, from Le Fooding to Time Out and Gault&Millau, which has distinguished several of these tables.

This selection blends trendy taquerias and chef-driven cantinas: Taco Mesa and its house tortillas praised by Le Fooding, Carlos Moreno and his bright COMER canteen, Guadalajara-born Jeanett Rosales Galán awarded a toque at Alegrías, and the authentic Anahuacalli, one of the oldest Mexican tables in the city.
