Roco is a contemporary pizzeria in Paris's 17th arrondissement, founded by Julien Ross and Alexandre Giesbert, creators of the neobistro Roca. Set in a minimalist space with raw stone walls and solid wood tables, the restaurant serves around fifteen classic pizzas crafted with premium Italian ingredients. The dough undergoes a slow 4-5 day maturation and cooks in just 2 minutes in a mixed wood/gas rotating oven. Ingredients are carefully sourced: Sicilian tomatoes from Terroirs d'avenir, Italian charcuterie and cheeses from Capri Bazar, Ortiz anchovies, and fior di latte mozzarella. The young, relaxed atmosphere becomes lively in the evening, attracting a trendy clientele. The restaurant stays open late and offers a fine selection of Italian wines and cocktails.
