Envie le Banquet is an all-you-can-eat buffet reimagined by chef Eloi Spinnler, blending culinary generosity with a zero-waste philosophy. Spanning 500 m² across two levels in the Marais, this contemporary banquet features around 100 homemade dishes organized across eight thematic counters: bakery, produce, seafood, charcuterie, cheese, kitchen, and pastry. Guests enjoy 60 hot and cold dishes, 25 carefully aged cheeses, and 15 house-made desserts celebrating French bistro cuisine. Portions are thoughtfully calibrated to minimize waste, ingredients are used whole-to-root, and surplus is redistributed to charitable organizations. The interior, designed by Dorénavant Studio, combines art deco aesthetics with conviviality, featuring a Winter Garden and a private Chapel. An immersive gastronomic experience where abundance meets consciousness and pleasure.
