Trained in Normandy with peasant bakers and having worked at Paris's finest establishments (Grenier à Pain, Terroirs d'Avenir, Fermentation Générale), Shinya offers a daily selection of breads made from organic heritage grains (khorasan, einkorn, rye, buckwheat) alongside focaccia, sourdough scones, and homemade pastries. Open Thursday to Sunday, 4:30-7:30 p.m. only, this address draws impressive queues for its beautifully crafted loaves with delicate crusts and generous, aromatic crumbs. Cash only.
