Salina is an iodized counter tucked on rue du Faubourg-Montmartre, celebrating marine flavors with elegance. Housed in a former fishmonger adorned with 19th-century Sarreguemines faience tiles classified as a Historic Monument, the venue breathes nautical authenticity. Under chef Fabien Chivot's direction, the cuisine blends raw preparations with Japanese influences: marinated and grilled mackerel, crispy salt cod accras, fried smelts, ceviche and white tuna tataki. Squid ink spaghetti accompanied by mussels in dashi broth showcases refined culinary approach.
