SAKA
Cocktail bar — Les Archives (Paris)
About
Saka is an intimate cocktail bar inspired by vintage Asian hotel establishments. Created by Frédéric Paolini, formerly of Michelin-starred Ogata, and his partner Anaïs Brochen, this twelve-seat venue embodies hospitality, simplicity, and balanced recipes. The white-jacketed head bartender welcomes guests at a large wooden counter with meticulous attention to detail. The curated cocktail menu features classics and original creations, prepared with ice hand-cut daily from spring water blocks to ensure perfect dilution control. The refined atmosphere, accompanied by jazz and bossa-nova, pairs beautifully with exquisite Japanese bar snacks (otsumami): roasted eggplant with miso, tender daikon, lotus root salad, and plump gyozas. A successful Japanese interlude in the Marais.
