Literary hidden in a dark alley, Au passage restaurant defines modern French bistro cuisine. Its unpretentious environment is very casual and relaxed but the food is interesting. On the day of the visit we tried the foie parfait (€8), the burata tartar (€8) and the Lapin braise (€10). All the dishes were delicious, including the lapin (rabbit leg). Tender, fresh and perfectly cooked with delicate aromas and jus, the dish became a dip with the wonderful crunchy French bread. Service at Le Baratin was friendly French without any attitude and the environment very cozy.

REVIEW: AU PASSAGE PHOTOS Local or Regional, French, Spanish or Tapas There's a lot Paris can make you feel—chicer, for one thing—but younger? For that head to this bistrot à vins in the arty eleventh arrondissement. Run by a smart young team, it has a Deco mosaic ­façade, a thrift-shop cool that comes from its mix-and-match of secondhand furniture, and a welcoming vibe—no one will make you feel out of place, even if you're (horrors!) over 30. With late-night service (it closes at 2 am, unusual in early-to-bed Paris) and a food-loving crowd, it epitomizes the new breed of wine bars that have been cropping up in the city. Favorites include creamed herring garnished with beets, gooseberries, and purslane; veal liver with onions and a velvety potato purée; and tuna and mussels with grilled potatoes in saffron mayonnaise.

* Date 1 juil. 2023 * partager Labo depuis deux lustres de jeunes chefs Erasmus, d’ailleurs, voire antipodiques (cf. le duo australien James Henry et Shaun Kelly qui brillent au Doyenné à Saint-Vrain), ce rade persiste dans son jus d’avant, comptoir en comblanchien, grand miroir et géantes ardoises, mobilier récup’, sol en cassons et plancher, escalier en colimaçon propulsant vers les commodités. Quant au pochoir de Miss.Tic, sel de la façade, un abruti-béotien-malveillant l’a effacé, la châtrant de son pittoresque. Côté tapasseries, c’est de nouveau un natif du pays des dingos, Léonardo Porta, qui les met à jour : musculeux parfait de foies de poulet, à tartiner d’emblée ; tartare de thon aux anchois et chou-rave, jouant l’équilibriste entre piment d’Espelette, sucre et vinaigre d’assaisonnement ; nuggets de cervelle de veau explosifs en bouche (le croquant et le mou) épongés par une crème persil-aneth ; et heureux packaging d’un sorbet fruits rouges, poudre de chocolat et mascarpone in fine. // Adrien Nouviaire POUR LA SOIF ?
