Prévelle is chef Romain Meder's first restaurant as owner, following his tenure as executive chef under Alain Ducasse at Plaza Athénée. Located on rue Saint-Dominique near Les Invalides, this fine-dining establishment showcases a resolutely plant-centric cuisine, rooted in Île-de-France produce and complemented by carefully selected fish and poultry. Meder demonstrates exceptional technical mastery, treating vegetables with the same care as meats, extracting deep flavors through precise roasting and unexpected flavor combinations.
