Minore is a unique Parisian venue combining an independent restaurant and cocktail bar. Led by Japanese chef Katsuaki Okiyama (formerly Abri) and bartender Hugo Combe (Classique), this establishment offers French cuisine with Japanese accents in a relaxed bistro atmosphere. The restaurant seats 22 guests around a seasonal tasting menu featuring balanced, personal compositions: artichokes, morels, foie gras, red tuna, cod, duck. The bar serves 6-8 rotating cocktails in a Japanese style, using Japanese whiskies and shochu with minimalist presentation.
