So, can you tell us a little about this place? You can enter this bar two ways: via the 180-seat pizza eatery Daroco, which is located in Jean-Paul Gaultier's former flagship store, or via the famous Passage Vivienne. Either way, while it's not positioned as a "secret" bar, it can be difficult to find if you don't know what you're looking for. Once you reach the space, with its high ceilings and contemporary decor (naturally, there are the requisite hanging plants and a graphic patterned marble bar), you'll feel as if you've been beamed to New York's Lower East Side. The all-male bar staff wear matching aprons with leather straps over striped shirts, while music from the likes of Bruno Mars plays overhead. Cool. So who’s there? The attractive, mid-30s crowd seemed to be a mix of friends and couples donning beards, tattoos, red lips, and furs worn with sneakers. Everyone was seated, either at the bar or a table. Those at the bar seemed interested in their drinks, while those at the tables seemed more keen on each other—or when their table at Daroco would be ready. How are the drinks? The place is owned by Nico de Soto who, after getting his start with the Experimental Cocktail Group, won various awards (Most Influential Bartender at Paris's Cocktail & Spirits show in 2014 among others) and then opened his own joint called Mace in New York. Danico is his first piloted project back on his home turf and it's a definite winner. His newly-launched menu format, dubbed “Danico Xplorer,” is travel-minded and reflects a specific region of the world (Soto also took inspiration from some of the best bars he visited around the globe). Each of the six current cocktails is listed in English and comes with a note from Soto about the inspiration along with information about the flavor profiles and how it's served (stirred, shaken, etc.). The current menu centers on India with illustrations by French artist Tristan Barbier, and some of the drinks include the "Varanasi" featuring Plantation 3 Stars rum, peas, nimbu pani (a traditional Indian lemonade) and turmeric cream soda, and the "3 Butter Chickens," named after the popular Indian dish, with Hendrick’s Gin, Martini Rubino vermouth, Campari, ghee butter, garam masala, sandalwood and tomato water. Worth ordering something to eat, too? Those seeking a real meal with cutlery should head to the front and put their name down for a pie at Daroco. But if a snack is all you're after, they do offer focaccia and plates of Italian cheeses. Did the staff do you right? The crew here were clearly taught well. Within seconds of entering, you'll be greeted with a "bonsoir" and a menu. After giving you time to make your selection, they'll take your order and happily offer suggestions or answer questions. They won't be offended if you order something classic or ask for a bartender's choice. If anything, with a fully stocked bar featuring a wide variety of liquors, they seem up for the challenge. In fact, in between making drinks, the bartenders often play around with the spirits and hand out tastes to inquiring patrons. They're super friendly: don't be surprised if a shot of dill-infused tequila or an extra helping of garnishes (candied walnuts!) are placed in front of you without having asked. Wrap it up: what are we coming here for? It's a solid choice for a pre- or post-dining cocktail binge—whether you're after something weird and wild or basic, but exquisite. Paris-based bar Danico, recently ranked no. 51 in the World’s 50 Best Bars 51-100 list 2023, has launched its third cocktail menu, ‘Japan’. The new menu follows ‘Xplorer’, the bar’s conceptual menu series, as the drinks list evolves every six months, highlighting a specific region of the world that is inspired by the travels of bartender and owner Nico de Soto. De Soto and Danico’s bar manager Coco Gaudin worked with the team to develop the cocktails, which have been designed to pay homage to their Japanese inspiration. The cocktail ‘Sakura’ is inspired by the nation’s cherry blossoms, laced with Hendrick's gin, Martini Rubino Vermouth, Campari, umesha liqueur and finished off by infusing cherry blossom.
