Braisenville is a Parisian bistronomic restaurant established in 2011 on rue Condorcet in the 9th arrondissement. Its unique concept centers on a Spanish Josper coal-fired oven where nearly all dishes are cooked over Argentine charcoal. The restaurant serves « raciones » – generous small portions inspired by Spanish tapas – encouraging creative flavor exploration. Led by owners Philippe Baranes and Karim Habibi with chef Romuald Sanfourche, the kitchen delivers inventive fusion cuisine blending Franco-Japanese and Latin-South American influences.
