About
Alliance is a gastronomic restaurant in Paris's 5th arrondissement, founded in 2015 by Japanese chef Toshitaka Omiya and maître d'hôtel Shawn Joyeux. Awarded two Michelin stars and three Gault&Millau toques, it embodies a subtle alliance between French technical rigor and refined Japanese sensibility. The cuisine is legible and instinctive, celebrating seasonal ingredients through meticulously plated dishes. Service, orchestrated with warmth and precision, creates an intimate and refined atmosphere. Tasting menus deliver a gastronomic experience where every detail matters, from housemade bread to delicate interludes between courses.

What the sources say.
Excerpts from 16 editorial mentions cross-referenced by Gatto.
nouvellesgastronomiques.com “I never got the chance to go to Astrance when it first opened on a sleepy street in the 16th, quietly hustling without the weight of so many Michelin stars. But I imagine it must have felt a lot like dining at Alliance.”
