What were your first impressions when you arrived? Walking into this restaurant just off Canal Saint-Martin, in the 10th arrondissement, feels like a breath of fresh air—from the hanging plants to the wildflowers on the table, and the starkly white wainscoting below the exposed stone walls. What’s the crowd like? The crowd skews mid-30s and fairly affluent (the restaurant offers a tasting menu a month—at least) and in-the-know. What should we be drinking? You could definitely come here if your'e solely soif (thirsty)—but then you'd then miss out on Chef Linda Granebring's remarkable fare. Either way, sommelier Julien Jack Alda knows his stuff, and is quite happy to let you sample and taste (within reason, of course). The 11-page wine list is natural-heavy and French-focused, but prices are welcoming, with glasses starting at $8 for an Ardèche red, and bottles like a Rhone Valley white in the $40 range. No cocktails, but they do have beer. Main event: the food. Give us the lowdown—especially what not to miss. This is a shared, seasonal-plates spot with a limited selection, so we're going to go ahead and suggest you just order the whole menu. (Pending you're not alone, of course.) From mixed-mushroom gnocchi in a parsley jus, to pork shoulder in a soy dressing, we didn't have a bad dish the night we went. In fact, we only wanted more of everything. Do not, under any circumstances, skip Linda's pavlova—meringue paired with cream, caramel, and candied ginger—if it's on offer; it may not be because the menu changes so often. The point is: Even if you think you're not into something (like, say, meringue) Linda will change your mind. And how did the front-of-house folks treat you? From start to finish, this is a high-class experience in a casual, yet still classy atmosphere. Our water carafes never sat empty and the dishes were sent out spaciously; allowing us to savor every bite a little bit longer on the tastebuds. What’s the real-real on why we’re coming here? You'll impress whomever you take to this Paris restaurant and bar—whether it's a date, your parents, or a dear friend. While you shouldn't expect any late-night debauchery, you certainly won't be rushed through your experience, and will leave full, and maybe slightly tipsy. (But in a controlled, you-can-handle-it manner, bien sûr.) Perhaps that's what they intended by choosing to open at a welcoming 6 p.m. and pour the last drop at midnight.
