On est toujours à la recherche de petites adresses si précieuses, où l’on peut débarquer entre copains, goûter à tous les petits plats trop bons et vivre un moment sympathique, branché mais sans chichi... Ca tombe bien puisque c’est exactement ce que propose Julien Duboué (Top Chef) talent très prometteur de la gastronomie au cœur de son adresse basque du côté de la Bourse qui combine street-food + resto + bar. Notre crush est évidemment son comptoir à tapas dément avec des tables hautes où l’on peut débarquer en bande et prolonger, faire de l’apéro un sport qui traîne en longueur. Reste à commander et recommander à gogo ses petites assiettes à se damner de plaisir : balls de risotto au chèvre et piquillos (13€) nems de canard sauce thaï (14€), smoothie de tomate dingo (4€) burger de cochon braisé (7€) sans compter les mythiques croquetas. Ouvert tous les jours de 8h à 2h.

First Look: A Noste Tapas Bar & Restaurant

It is no surprise that Julien Duboue’s A Noste (means “Chez Nous”) has only been open a week and it is as hot as a house on fire. He’s gained a loyal following with his other two restaurants he recently closed to make room for both of them under one roof in an old warehouse by the Opera. Afaria was his gourmet modern neo-bistro - and- Dans Les Landes in the Latin Quarter was his tapas bar, both of which reflected his Basque country roots in the Landes region. The opening party brought out other chef stars, rugby pals and restaurant staff which packed the house and terrace. It went off without a hitch due to a proven track record and seasoned staff that came with him. I’ve known Julien for years so I wasn’t as concerned about reviewing the food as I was about this new space and if it would work. No worries there. A Noste is huge for Paris standards, 300m2 spread out over two floors and a terrace with 3 concepts under one roof. Think a small Eataly Basque-style. On street level, you’ll find a clever Taloa street food truck actually inside the building & grilling traditional sandwiches stuffed with their choices of the day (duck confit panini anyone?) to eat in or take away, and the rest of the room filled with a bar and long farm house tables for piling on the tapas he perfected at Dans Les Landes. They’ll hand you a clipboard menu and pencil and you just tick off the list and send in your order. We ordered our Dans Les Landes favorites of Eric Ospital cured ham, BBQ pork ribs (12€), duck & oyster tartare (6€), smoked duck breast & sheep’s milk fougasse (8€), foie gras & ginger ravioli (19€), escabeche of grilled tuna (15€), fish & chips ( 14€), sardine rillettes (7 €), grilled razor clams and mussels ( 14€), fried calamari (11€), and the famous smoked duck breast-polenta sticks (9€). Everything is served with a clever twist, like fish and chips wrapped in newspaper and fried calamari in a wooden shoe. Upstairs, his gourmet “La Table” restaurant is fresh and pretty in blue and yellow tones - although I haven’t had a chance to try it yet. The menu is organized into 6 courses, the last being desserts from Patisserie des Reves’ Philippe Conticini. When I told Julien that it was really clever to have both Dans Les Landes and Afaria in the same space, he nodded to the dining room and winked at me proudly, “This is better than Afaria!” He hasn’t finished yet though - Julien has just been handed the keys to another space across the street where the tapas will be to go. I haven’t seen anything like this in Paris - If you are looking for a place to take a group of friends at any time of day to order platters of food, pitchers of white sangria, and laugh out loud without the police being called in, A Noste may mean “Chez Nous” but it will quickly feel like “Chez Vous!” The wine list? It needs some work for sure… thank goodness for the Elian da Ros Cotes du Marmandais.

12/20 Table Gourmande Repris par Guy Martin (le Grand Véfour) en 2021, qui avait succédé à Julien Duboué, A. Noste n'a pas perdu au change et a conservé ses belles couleurs du sud-ouest, sa carte de tapas dans l'air du temps et son ambiance joyeuse. On commande en cochant sur une feuille volante les plats qu'on désire puis on picore, dans le plat commun ou pourquoi pas dans l'assiette du voisin. Les prix sont bien cadrés, la tortilla de pommes de terre à l'ail doux est bien généreuse, le magret de canard grillé aux sarments de vignes et frites fait honneur à son rang tout comme les chipirons frits au piment d'Espelette.
