Le Maxan, situé dans le triangle d'or parisien, est un restaurant gastronomique français néo-classique dirigé par Laurent Zajac, Serge Conquet et Jean-Yves Guichard. Installé rue Quentin-Bauchart, l'établissement propose une cuisine raffinée et créative dans un cadre élégant dessiné par Ingrid Root, avec un superbe lustre de Murano et des murs gris et taupe. La carte met en valeur des plats traditionnels revisités comme les œufs mollets panés, les coquilles Saint-Jacques et la côte de veau, avec des menus à 32€ et 40€. L'ambiance feutrée et sophistiquée en fait une adresse prometteuse, proche des Champs-Élysées.

Vote utilisateur: 4 / 5 Total des votes : 13 Nous avions été parmi les tout premiers à vous dire tout le bien que nous pensions du restaurant Maxan quand il s'était installé à Paris près de Saint-Augustin, et nous avions adoré sa cuisine, vraiment digne d'un étoilé au Michelin. Le revoilà aux Champs-Elysées, toujours avec Serge Conquet côté salle et Laurent Jazac côté fourneaux, aujourd'hui associés à Jean-Yves Guichard, ex chef étoilé du Clavel. MAXAN, UN RESTAURANT AVEC UNE BELLE CUISINE NÉO CLASSIQUE. Mais cette fois-ci, rien à dire côté cadre, très réussi dans un registre contemporain, avec une salle à manger aux murs taupe et gris constellés de miroirs bombés « rond de sorcière », et suspendu en son centre, un superbe lustre de Murano. Côté cuisine, rien de changé... et c'est tant mieux ! Comme autrefois, on s'y régale d'une superbe cuisine néo-classique qui vous régale à coup de tourteau décortiqué, purée d’avocat et pousses d'épinard, de coquilles Saint-Jacques bien dorées servies sur une purée de cerfeuil tubéreux rehaussées d'une vinaigrette de truffes d'automne, d'une cuisse de colvert confite, cocos de Paimpol et girolles et d'une parfaite orange givrée et mirliton meringué au Grand Marnier. The cuisine has been entrusted to Laurent Zajac, who learned from Alain Dutournier. Zajac delivers traditional French fare with a dash of creativity. Everything is tempting, from the daily specials to hearty dishes like the snails under puff pastry with parsley juice and artichokes; the boiled eggs, which have been fried and coated with bread crumbs; and a beef fillet with bordelaise sauce, accompanied by home-style french fries. To extend the treat, a big pot of vanilla cream may be shared by two. Due to Conquet’s passion for wine, the cellar proves to be rather well-supplied.
